Ratafia is a liqueur made from grapes must straight from harvest. This fortified wine is lended with a neutral distilled alcohol and aged in a barrel to come onto its own.

This is a lovely, fresh and fruit ratafia ideal for exciting food pairings or unique cocktails. Composition makes it a rare gem to truly indulge in.

The crisp and elegant initial aroma conjures notes of macerated cherry, raspberry and fresh blackcurrant with hints of spice and peppery mint. Aerating the ratafia brings out notes of cherry stone, almond, liquorice, redcurrant, Amarena cherry, fig, pepper, cardamom and prune. It starts out smooth and sleek on the palate. It builds into a pulpy and full-bodied fruit flavour enhanced by sharp stewed berries. Notes of candied orange peel give it both an indulgent coating and svelte freshness. The beautifully balanced flavour comes together to finish on a more liqueur feel with a robust fruitiness that lingers on the tongue.

Food/Wine Paring: A beef fillet in a pastry crust with Ratafia sauce, a duck breast with blackcurrant reduction, a skewer of flambéed prawns and mild chorizo, a rack of lamb infused with rosemary and saffron, and a gratin of apple with butter.

Meet the Grower: Champagne Colin

Women pioneered the Colin Champagne vineyard, which is now run by brothers Richard and Romain Colin. The passion for vines and wine began with their grandmothers Geneviève Prieur and Marie Louise Radet who both inherited vines from their parents. But the family’s first winegrower dates back to 1829 with Constant Piéton, the great grandfather of Geneviève Prieur, Richard’s and Romain’s maternal grandmother.

Wine-making

The harvest, hand-picked when the grapes reach perfect maturity, is then taken to a traditional wooden Coquard press as well as a pneumatic press on the property. A few months in casks give the wines time to oxygenate slowly.

At Champagne Colin, the wines are aged on the lees for at least double the minimum time required and for more than 6 months after disgorgement. Each plot is vinified separately to allow each of our terroirs to fully express its character. Thanks to these traditional methods tending vines and crafting wines, Champagne Colin champagnes are marked by finesse and elegance, and typical of the Côte des Blancs’ greatest vineyards.

The Estate

Most of the 10-hectare estate is planted with Chardonnay – the king of grape varieties in the Blanc de blancs area of Champagne, France – in the prestigious Côte des Blancs in Vertus, Bergères-les-Vertus and Cuis, classified as Premier Cru Champagne and in the Grand Cru villages of Cramant and Oiry. Pinot Noir and Pinot Meunier are grown in the village of Sézanne. The rest of the vineyard lies further away in Venteuil in the Marne Valley and in Dormans.
