An exceptional champagne made from Chardonnays from our Grand Cru vineyards in Cramant and Oiry. Highly aromatic with aromas of sweet pastries, honey and toasted almonds, it is perfect as an aperitif for those special evening parties or marvellous with foie gras, capon or warm rum baba with chocolate.

Composition

100% Chardonnay from 2014 grapes. Fermented in stainless steel tanks. No malolactic fermentation. Aged on lees: 7 years.

This champagne is dosed at 9gr/l.

Tasting Notes

The initial aromas are lovely and elegantly mature with wax, honey, Quine, melon and orange blossom. Next come sweet linseed oil and a wealth of spices. The rich and complex blend is joined by a refreshing bergamot, lime, candied orange and mandarine.

The taste matches the aroma with delicious salt and flavourful sharpness. The wine’s natural effervescence brings out notes of candied fruit, beautiful ripeness and remarkable freshness.

Serve with a truffled foie gras bonbon, fattened chicken with morels, foie gras in brioche, seared beef fillet, riosotto, parmesan, meringue pie, zesty zabaglione, verbena peach etc.

Meet the Grower: Champagne Colin

Women pioneered the Colin Champagne vineyard, which is now run by brothers Richard and Romain Colin. The passion for vines and wine began with their grandmothers Geneviève Prieur and Marie Louise Radet who both inherited vines from their parents. But the family’s first winegrower dates back to 1829 with Constant Piéton, the great grandfather of Geneviève Prieur, Richard’s and Romain’s maternal grandmother.

Wine-making

The harvest, hand-picked when the grapes reach perfect maturity, is then taken to a traditional wooden Coquard press as well as a pneumatic press on the property. A few months in casks give the wines time to oxygenate slowly.

At Champagne Colin, the wines are aged on the lees for at least double the minimum time required and for more than 6 months after disgorgement. Each plot is vinified separately to allow each of our terroirs to fully express its character. Thanks to these traditional methods tending vines and crafting wines, Champagne Colin champagnes are marked by finesse and elegance, and typical of the Côte des Blancs’ greatest vineyards.

The Estate

Most of the 10-hectare estate is planted with Chardonnay – the king of grape varieties in the Blanc de blancs area of Champagne, France – in the prestigious Côte des Blancs in Vertus, Bergères-les-Vertus and Cuis, classified as Premier Cru Champagne and in the Grand Cru villages of Cramant and Oiry. Pinot Noir and Pinot Meunier are grown in the village of Sézanne. The rest of the vineyard lies further away in Venteuil in the Marne Valley and in Dormans.
