The name 3 Filles de Caractère, literally 3 tempered daughters, referring to the Anne-Sophie and Sébastien Boever’s 3 daughters. This aged champagne is a blend of pinot noir and chardonnay old grapes.

Composition

A blend of 50% Pinot Noir and 50% Chardonnay with the three millésime years of 2008, 2009 and 2010. Caractère vines are 4 years old from the Grand Cru villages of Louvois and Bouzy. Dosed at 5g/l, this is an extra brut champagne aged 8 years in the wine cellars.

When to drink

Match with your favourite seafood. Sashimi, blackened cod or even salt and pepper squid.

Awards

Caractère recently received a gold medal and a “coup de coeur” (19/20) at the World Feminalise competition, where the jury is exclusively made of women. It also won the Prix des Vinalies 2019, a competition where the jury is made exclusively of oenologists.

Meet the Grower: Champagne Boever

Champagne A&S Boever is located in the Montagne de Reims area, the northernmost of the Champagne region, where Pinot Noir is the predominant grape varietal.

The Boever family owns 5 hectares, located in the sought after Grand Cru villages of Louvois, Aÿ, and Bouzy. Anne-Sophie, Sébastien & Thomas Boever are the 3 generation to manage the vineyard since 1946. Each custodian understands they need to be true to the values of responsibility, sustainability and authenticity. Overseeing cultivation of the vines, the winemaking process, marketing and sales of their wonderful champagne. With the exception of bottling, the entire champagne making process is completed on the estate.
